Fredhots and Fries in Glenview has been on my to-do list for quite some time. They made a smart PR move which made a lot of buzz around the holidays by serving reindeer sausage. Game meats and creative sausages (made famous by another well-known Chicago sausage superstore) are the cornerstone of Fredhots, along with terrific frites and a wide array of aiolis for dipping.
This past Saturday I went for a very good Italian beef (which has a unique spice profile), an elk sausage with bourbon mustard, berry chutney, and grilled onions. Here's the sausage in yo' face:

Frites, highly recommended, with standard garlic aioli (but there were plenty of others to choose from):

Fredhots is a heck of an nice place with a lot of charm and personality. Check it out at 1707 Chestnut, Glenview, (847) 657-9200.
