Paul Kahan of Blackbird is the winner of the James Beard Foundation's 2004 Best Chef: Midwest. Also nominated were Sandro Gamba of NoMi, Michael Kornick of MK, Tony Mantuano of Spiaggia, and Lucia Watson of Lucia's (Minneapolis). Congrats to the whole city for dominating Midwestern cuisine (4 out of 5 noms).
For those of you who don't know, James Beard awards are about as big as it gets in the food world.
I haven't been to Blackbird in over a year and a half, but I do remember a very enjoyable meal with some wonderful flavors, and a very memorable cheese course. The one big drawback for me was the extremely cramped seating.
Check out Blackbird at 619 West Randolph Street, 312-715-0708. See all the James Beard awards at www.jamesbeard.org.
